French Wines: Bailly-LaPierre

Located in the ancient underground quarries in Bailly in the Auxerre region of France, just a few kilometres southwest of the village of Chablis. Caves de Bailly has over 80 independent wine growers who have pooled resources in order to offer the best wines possible with the most modern equipment. The Vignoble Auxerrois grows five principal grapes: Chardonnay, Pinot Noir, Gamay, Aligote, and Sauvignon Blanc (see Saint-Bris) with a few other grapes for the local market such as Cesar.
  • Cremant de Bourgogne Chardonnay
    Crémant de Bourgogne is a sparkling wine that meets the same special requirements of the Champenoise method. These practices, such as hand-picking, separate cuvees, second pressings, and final pressed juice, are now more explicit and enforeced more consistently. The galleries in the Bailly quarries were dug below 50 metres of rock beginning in the 12th century and now have an area of over 10 acres.

    This lovely Crémant de Bourgogne Chardonnay is aged on the lees for over 2 years, giving a characteristic yeasty-toasty nose reminiscent of Champagne. It is important to age the Chardonnay to give it smoothness. This has a lovely varietal character, smooth and creamy on the palate, with a deliciously long, lemony finish. Excellent Apéritif!

    • Cremant de Bourgogne Pinot Noir
      Crémant de Bourgogne is a sparkling wine that meets the same special requirements of the Champenoise method.       This lovely Crémant de Bourgogne Pinot Noir is aged on the lees for over 2 years, giving a characteristic yeasty-toasty nose reminiscent of Champagne. The nose has the full, ripe red fruit aromas of Blanc de Noirs and has a round, velvety character on the palate. The Pinot Noir has enough substance to marry with food, particularly white or red meat game. It’s also deliciously smooth enough by itself. Bon Appétit!

      • Cremant de Bourgogne Reserve

        The Réserve bottling consists of all four Burgundy grapes : Pinot Noir, Chardonnay (40% each), Aligoté and Gamay (10% each). This bottling is the top of the line for Bailly-Lapierre, required aging is a minimum of 16 months on the lees, but this typically is in the bottle months longer, giving a yeasty-toasty nose, very textured mid-palate and a long, crisp finish, reminiscent of true Champagne.

        This Réserve is the only half bottle Bailly-Lapierre offers, since it is fermented in the 375 ml bottle. More textured than the Chardonnay, it is a crowd-pleaser. Now in 750 ml bottles!

        • Cremant de Bourgogne Rose

          Cremant de Bourgogne is a sparkling wine that meets the same special requirements of Champagne or the Methode Champenoise. These practices, such as hand-picking, separate cuvees, second pressings, and final pressed juice, are now more explicit and enforeced more consistently. The galleries in the Bailly quarries were dug below 50 metres of rock beginning in the 12th century and now have an area of over 10 acres. This lovely Cremant de Bourgogne Rose is aged on the lees for over 2 years, giving a characteristic yeasty-toasty nose reminiscent of Champagne.

          It is made from 90% Pinot Noir and 10% Gamay with the color coming from the grape skins: the saignue method. The nose has the full, ripe red fruit aromas of Pinot Noir and has a rich round, fruity character on the palate, and a beautifully balanced finish. The Rose Cremant has enough substance to marry with food, particularly white or red meat game. It's also deliciously refreshing as an aperitif with some hors d'oeuvres or cheese.
